Garam Masala
The finishing spice blend of Indian cooking. Garam Masala is a warm, complex, and deeply aromatic blend of roasted spices — typically coriander, cumin, cardamom, black pepper, cinnamon, cloves, and nutmeg — that is added at the end of cooking to lift and finish a dish with a heady, fragrant warmth. Not a heat spice, but a flavour spice — one of the most important in the Indian kitchen.
Stir into curries, dals, and spiced rice dishes in the final minutes of cooking, use in marinades for tandoori chicken, lamb, and paneer, add to spiced vegetable dishes, samosas, and pakoras, blend into yoghurt-based sauces and raitas, sprinkle over roasted cauliflower, chickpeas, and potatoes, or use as a finishing seasoning over soups and lentil dishes.
